Carrots are a versatile, long-keeping vegetable, but without the right storage they lose moisture, shrivel and turn bitter. For exporters, controlled cold storage is the difference between a crisp, sweet carrot and a limp one when the container reaches its destination.

Ideal conditions for carrot storage
Fresh carrots store best near freezing at about 0-1°C with very high relative humidity, around 95-100%. These conditions slow respiration and water loss while preserving natural sugars. Consistent temperature avoids condensation that can cause rot.

From field to cold chain in China
